Ingredients:
3-4 round slices of eggplant
1/2 cup reduced fat mozzarella cheese
1.5 tablespoons of parmesan cheese
1/4-1/3 cup of panko
1-2 egg-whites
1 tablespoon of crushed red chili flakes
2 teaspoons Italian seasoning
1 teaspoon garlic powder
pinch of salt
1 teaspoon black pepper
1/2-1/3 cup of marinara sauce
Directions: Preheat the oven to 450. Beat egg-whites and set aside. Mix Italian seasoning, garlic powder, black pepper, and .5 tablespoon of parmesan cheese with panko. Salt the eggplant and let sit for 5 minutes. Peel the eggplant unless you're gross and like the skin on the eggplant, JK.. whatever you prefer. Then, bread the eggplant egg whites->panko. Line on baking sheet and bake in the oven 10-15 minutes per side (depending on thickness). While eggplant is cooking lather 2 tablespoons of marinara sauce on the bottom of a pan. Once eggplant is done cooking put eggplant in the pan and put the remaining marinara sauce on top of the eggplant with the mozzarella cheese and remaining parmesan cheese. Bake in the oven covered in aluminum foil for 10-15 minutes until cheese is melted and enjoy!
